Daring Cook's Challenge : Rice with mushrooms, cuttlefish and artichokes





This new Challenge was chosen by Olga from Las Cosas de Olga and Olga’s Recipes, she has chosen a delicious Spanish recipe, Rice with mushrooms, cuttlefish and artichokes by José Andrés, one of the most important Spanish Chefs at the moment.
The making of this dish was in three steps: Sofregit, Aioli and the actual Rice.
I used little musky octopuses (moscardini) instead of cuttlefish and left them whole.
I really enjoied the Sofregit and the Aioli but I thought that the rice was a bit mild in flavour, it actually became much better with some Aioli.

Your dished ended up more fluid than a lot of the other ones around that I've seen. Was this an intentional thing that you did for the dish?

Ciao Natalia,
il mio non sapeve di niente, l'unica parte buona era la crosticina. Quando ho fatto il corso abbiamo usato gamberi, gamberoni, mazzancolle, cozze, peperoni carote sedano e pomodori. Era buonissimo.
penso sia come mettere a paragone un buon piatto di trenette allo scoglio, con una un piatto di spaghetti ai carciofi, se non ci metti qualcosa che fà la differenza, tipo un salciccia pecorino lardo di colonnata, non sà di niente. Ci deve essere qualcosa che dà sapore.
Poi se devo essere sincera, quello che non mi è piaciuto è che non c'era nessun tipo di insegnamento riguardo alla paella. Nella paella per chi non l'ha mai fatta è importante che il riso sia steso in uno strato sottile, è importante la quantità di acqua che deve essere il doppio di quella del riso(probabilmente con i funghi un pò di meno), è importante che il fuoco sia alto, e da un certo punto in poi non bisogna girare perchè si deve formare la crosticina, che a detta della nostra cheff è quello che distingue una buona paella.
