For the 'Potluck' week I chose a very fast and yummy recipe you can whip up when friends are already at your doorbell (...almost).
It's from the book 'How to be a Domestic Goddess':
Recipe:
3/4 cup Cashel Blue (I used Gorgonzola Piccante)
scant 1/2 cup butter softened
1 large egg yolk
3/4 cup flour
1/4 cup blue cornmeal (I used polenta)
Preheat the oven to 400 ° F
Mix everything enough to get a soft dough, let it rest in the refrigerator.
Roll to a thickness of 1/4 inch cut in any shape you like and bake for 10-15 minutes.

These sound fabulous! What a wonderful nibble to have when company arrives! BRAVO!
these would be perfect for a wine and cheese party I'm thinking about throwing. They sound delicious.
OK--Yum! They look so good I would be eating them up before I could serve them to guests! A great potluck pick!
Wow, they sound great! Perfect with a glass.. or bottle! of wine.
These look and sound delicious. I think I could stand over the bowl and eat them all!
Oooh, these would not last for more than ten minutes. I must make a note of what I want to buy from Rome and gorgonzola would be one of these :)
These sound awesome! I'm such a fan of gorgonzola but never thought to bake it into a cracker...yum!
