Fiori di Zucca con Ricotta e Pancetta (italiano a seguire)



In Italy it's quite common to find 'fiori di zucca fritti' (fried summer squash flowers), they are filled with mozzarella and a little anchovy, dipped in a egg and flour batter and dip fried in olive oil. My version (I stole the idea from a restaurant) is the flowers filled with sheep's ricotta whipped with a little cream and grated parmigiano and then wrapped with pancetta's strips. I cooked the flowers in a moderate oven for about 15 minutes and if necessary I turned on the grill.

Questa idea l'ho rubata ad un ristorante vicino a casa (Osteria Pistoia , piazza Madonna della Salette a Roma) . I fiori così mi sono piaciuti così tanto che li ho rifatti più volte da quando ho trovato delle confezioni di fiori di zucca nel reparto insalate di un supermercato di zona.
Il procedimento è semplicissimo: si monta con una frusta della ricotta di pecora con un po' di panna e parmigiano e si mette nei fiori (con una sac a poche è velocissimo), si riveste il fiore con mezza fettina di pancetta e si passa in forno per 15 minuti accendendo il grill alla fine. Ahhhh....In the summer when the squash blossoms are starting, we have these all the time. We are an Italian-American family and love the traditional recipes...this makes my mouth water!

I love these zucchini florets but it's a pity I can't find any, at least not in Athens. Your appetizer sounds delicious.

Oh I do love these flowers. When we're on holiday in Italy I buy them and fill them with ricotta and/or turkey stuffing, coat them in breadcrumbs and fry them in whatever pan I can find in our holiday house.

Io ho lavorato tutto il giorno e stasera mia figlia mi ha detto che all'ora di pranzo è venuto un corriere, e lei,pensando fosse una consegna da parte delle aziende per cui lavoriamo ha detto che non eravamo in casa....d'altra parte i soldi non li aveva lei,ma il portiere....e il sabato pomeriggio non lavora neanche lui......hanno detto che torneranno lunedì......grrrrrrr....

All I can say is "Yum!" I have always wanted to try these, and I have never seen them with bacon wrapped around before.

Looks delicious... I'm sure it's great without the pancetta but it must be extra tasty with it.
