I wanted to brulee mine and it got eaten too fast--loved the shot of the slice after you went off to find your camera!...And for the record, the pith doesn't make the tart sour so much as it makes it bitter...which isn't a problem if you have thin-skinned lemons. So many lemons have fluffy, thick skin--thick with pith. That is probably why some people are have bitterness issues.
